Shrimp Creole
4 T fat
1/2 c chopped green pepper
1 t salt
1/2 c water
1/4 t pepper
1/2 chopped onion
1 clove garlic
1/4 t chili powder
1 can tomato sauce (8 oz)
1 cup cooked shrimp
Melt fat, add onion, green pepper, and garlic, cook over med heat in skillet 10 min. add salt, pepper, chili powder, sauce, and water, simmer 10 minutes more, add shrimp. When heated, serve over rice. services 4.

Veal Cutlets
This recipe is from the 1940's, somewhere around 45 to 49.
Veal Cutlets
4 veal cutlets salt and pepper to taste
about 1/2 cup cracker crumbs
4 tablespoons fat
2 teaspoons parsley
2 teaspoons chives
1/2 teaspoon lemon juice
2 cans (8oz) tomato sauce
wipe cutlets with damp cloth, sprinkle with salt and pepper, cover with crumbs, brown in 2 tablespoons fat. remove cutlets, add rest of fat, tomato sauce, chives, parsley, lemon juice, blend well, bake cutlets in sauce 325f oven for 30 minutes until done.
Serves 4.
