My Pineapple upside down Cake
In a 9x9 pan melt, 1/3 cup butter then to the melted butter add in pan 3/4 cup brown sugar, mix, then put 9 pineapple slices in pan, three in a row. Set aside, SAVE JUICE. Place one cherry in each pineapple center.
Cake:
1 1/4 cups flour 3/4 cup sugar
1 1/2 teaspoonful baking powder 1/4 teaspoonful salt
3/4 cup pineapple juice 1/3 cup salad oil
1 egg 2 teaspoonfuls vanilla
Heat oven to 350. Mix all till smooth, pour into pan. Bake 35 to 45 minutes, watch your oven. Bake till it starts getting golden brown around the edges. Toothpick inserted in center will come out clean. . Invert onto plate. Leave pan over cake a few minutes. Serve warm or with whipped cream.
