My Mom's Oxtail Soup
another recipe from the 1950's!
2 # oxtails flour 3 T oil
1 large onion, chopped
1 large clove of garlic pressed or minced
2 cups rich beef stock
4 cups water
1 teaspoon leaf oregano
1/2 teaspoon leaf thyme
salt pepper to taste
1 can tomatoes (med size)
2 cups diced carrots and potatoes
1/2 large bell pepper, seeded, cored and chopped
1/2 cup minced fresh parsley.
1 1/2 cups shredded cabbage.
1. roll the tails in the flour and brown in the oil with the
garlic and onions.
2. Add broth, water, thyme, oregano, salt and pepper. boil.
3. reduce heat, simmer, covered until tails are tender about 2
1/2 hours.
4. Break up tomatoes, add with rest of ingredients, simmer,
covered for 30 min. Serves 5 to 6.
This is a place for my knitting, sewing, crochet designs and projects. I have been knitting since I was 4, and crocheting since age 19 and I have starting weaving again, along with sewing. So this is where I will be posting those patterns too.
